#Christmas Cookie Cups

So I’ve posted some from-scratch cupcake recipes from my friend’s blog, Got Cache?, that are absolutely delicious & sure to please, but if your family is anything like mine sometimes a quick & easy Christmas treat is all you can find time for between work, getting ready for Christmas day, & all the wonderful holiday celebrations with friends & family! While I love to bake & never go anywhere without bringing food or a baked good (guess that’s the southern breeding in me), often I go back to that semi-homemade concept I am such a fan of! You can make a tasty treat & put love & thoughtfulness into it without stressing yourself out & wasting the hours that seem in such short supply even more so this time of year! So my easy, festive, & yummy recipe of the day…


Christmas Cookie Cups


Supplies needed: refrigerated cookie dough, chocolate chips, sprinkles, baking spray, & a mini muffin/cupcake pan

*Quick side note before we get down to business: You’ll notice I didn’t specify a specific flavor of cookie dough or chocolate chip. Here’s why… it doesn’t matter lol That’s part of what I love about this recipe, endless possibilities! Just this week I have made: chocolate chip cookie dough with mint & dark chocolate chips (seasonal Nestle variety), peanut butter dough with semi-sweet chips & sprinkles, & chocolate chip dough with milk chocolate chips & sprinkles. So grab your favorite refrigerated dough and whatever chips your heart desires & lets get cooking!


Preheat your oven to 350 degrees & spray your pan with baking spray. Fill the cups about 3/4 of the way full with your dough. Bake for about 13 minutes. Peanut butter ones take less cooking time… if you are unsure of how long to leave them in the oven, consult the refrigerated dough’s packaging.


As soon as they are cooked, I use the back of a serving spoon to make the cups a little deeper so more chips will fit!


While the cookies are still in the pan, fill your cups with your chips & add some sprinkles if you want! Important tip: let your cookies cool COMPLETELY for easy, break free removal!! I’ve learned the hard way on this one… don’t want the bottoms left in the pan! After they are cool, spinning them a bit as you are taking them out helps too!


And in less than 20 minutes from start to finish, you have your cookie cups all ready to go!

Another thing I love about this recipe idea is one tube of refrigerated dough makes between 20 – 24 cookie cups (depending on how full you fill them) so you can quickly make lots of perfectly bite size goodies for any party or get-together! Yesterday I posted a new kid-favorite cupcake recipe, the famous Harry Potter butterbeer, but now it’s Got Cache After Dark In The Afternoon and its on to the adults! With all of the joy that comes with Christmas, also comes all of the pains..you know what i’m talking about. The lady with 20 items in the express lane in front of you with your one item you need to finish your item cooking, the jerk that comes down the wrong parking lot lane and takes his sweet time trying to get his precious car in the correct angle to park before you, and let’s not forget the hysterical screaming kids because they couldn’t get a toy unknowingly that they will get it in like three days tomorrow under the tree. #Boursin Mission #Smiley360 #Snowman Cheese Platter

Hello ya’ll! Hope everyone is having a wonderful holiday season! My posts haven’t been too frequent lately, but we’ve been so very busy celebrating birthdays (I turned 30 this year & was blessed with an awesome surprise party!!) & enjoying all the Christmas festivities! This time of year is often crunch time for gift buying, but while we still are doing some shopping, we have tried to focus on spending time with family & friends & stopping to sip the eggnog! We just got back from my uncle’s annual Christmas party, & as I unwind from a long day, I thought I’d give you an update on my latest Smiley360 mission and a holiday hors d’oeurve (I had to look up how to spell that… I can never remember lol) idea to go along with it.


My latest Smiley360 mission… Boursin Cheese!

I was super excited about this mission because I am always looking for something to bring to the many holiday parties & family get-togethers we have going on this time of year! Who doesn’t love a good cheese? Boursin makes several yummy variteties such as pepper, garlic & herb, shallot & chive, red chili pepper, & a seasonal cranberry & spice!


I needed two for my holiday themed cheese platter idea so I decided to give these varieties a whirl.


Add some raisin eyes, a baby carrot nose, a ribbon scarf, & some cinnamon stick arms… and your Boursin Cheese becomes a tasty cheese snowman, perfect for entertaining during this holiday season!


I served my Boursin snowman with some assorted cracker & pita chips.

Not only was this some hors d’oeurve eye candy, my family & friends quickly helped this little guy melt away!! Looking for easy, yummy entertaining ideas? Christmas is one of my favorite times of the year and even though i’m 27 there is still one family tradition that has continued to honored…baking day! Each year we pick one day a few days out before Christmas to do all of our holiday baking..cookies, fudge, gingerbread houses, cheesecakes, peanut brittle..you name it and we probably make some form of it. At first it was my Ohma, mom, brother, and myself..then Ohma passsed away and my brother grew out of wanting to bake and now 15+ years later it is always my mom and I.
